Satoshi, or Sat, are the smallest fraction of Bitcoin that has 8 decimal places.
Satoshi is named after Satoshi Nakamoto, the pseudonym who published the whitepaper in 2008 that start to the development of Bitcoin.
To make it easier to read and manage smaller transactions, instead of referring to 0.00000200 of Bitcoin for example, it is simpler to say just 200 Satoshis.
Satoshi is for Bitcoin, as Cents are for the Dollar, the difference is that for 1 Dollar there are 100 cents and for 1 Bitcoin there are 100 million Satoshi, this, because of its 8 decimal places.
